Fiery Dragon’s Breath Original Spiced Welsh Rum by the Spirit of Wales Distillery has won its first medal – a bronze – at the 2021 International Wine and Spirit Competition (IWSC) only months after its release.
Newport, South Wales, United Kingdom, 11 August 2021 – Inspired by the Celtic heritage of Wales and their protective red dragon, newcomer Dragon’s Breath Original Spiced Welsh Rum by the Spirit of Wales Distillery, has received an IWSC bronze medal at the 2021 competition.
This year the rum category for the IWSC was the biggest in its history, with 300 rums tasted from over 35 countries. Infused and flavoured rums continue to grow in popularity, with 28% of the entries at the IWSC having additional infusions of fruits and spices.
“Creating our Dragon’s Breath Spiced Rum has been a wonderful experience, and our customers love it. I am delighted that the IWSC judges loved it too!” Daniel Dyer, founder of the Spirit of Wales distillery, said at the announcement of the news of the IWSC win.
Dragon’s Breath Original Spiced Welsh Rum is a golden rum, created at the Spirit of Wales Distillery in Newport, that has both a fiery kick and subtle, lingering warmth and aromatic notes. The Newport-based distillery make this complex spiced Welsh rum using a unique process.
James Gibbons, head distiller, commented, “Creating an original molasses to glass Spiced Rum spirit has been one of our aims from the beginning.”
Produced from white rum, the award-winning spiced Welsh rum seeps with botanicals added over two weeks while the craft distillery macerates the rum in contact with repurposed bourbon barrels.
During the first week, vanilla and cinnamon rest in the white rum at 45% ABV. The vanilla provides a canvas for the other botanicals that are used, while cinnamon lends the Dragon’s Breath Spiced Welsh Rum its signature fiery warmth.
Cassia bark is added in the second week to intensify the fiery spice and sweetness Spirit of Wales strives for with the Dragon’s Breath Spiced Welsh Rum. Along with the cassia bark, allspice, cloves, and orange peel are added, and the rum rested further. The whole cloves support the cinnamon and are lively on the nose.
Once completed, the Spirit of Wales Distillery team filters, bottles the Dragon’s Breath Spiced Welsh Rum, seals, and stamps the bottles that have the red dragon and words from Welsh poet W. H. Davies on them. A delightful commemorative Welsh rum inspired by the Celtic nations and passion of Wales and now recognised internationally by the IWSC.
The IWSC bronze awarded Dragon’s Breath Original Spiced Welsh Rum is available in a 5cl, 20cl, and 50cl bottle. Available directly from the Spirit of Wales Distillery in Newport or the online store.
