Hailing from Denbigh in North Wales, Bryn Williams learnt to appreciate food and its origins from an early age. He would go shooting and fishing with his father and uncle and worked in his local bakery learning the trade; from this point Bryn knew that cooking was integral to his future.

Over the last ten years Bryn has worked in some of the most prestigious kitchens in London and with some of the world's most stellar chefs. In 1997 he began work under Marco Pierre White at The Criterion, went on to work under Michel Roux at Le Gavroche for 3 years, was Senior-Sous at The Orrery for four years and then moved to open Galvin at Windows with Chris Galvin, before opening Odette's for Vince Power in 2006.

In the same year Bryn was chosen to compete in the first series of the 'Great British Menu' on BBC1. Competing for Wales, Bryn triumphed with his fish course and went on to cook for the Queen's Birthday Banquet.

Bryn Williams is one of London's most talented young chefs and is now the Chef Patron of Odette's in Primrose Hill, taking over the property in the autumn of 2008. Throughout its 30 years Odette's has been recognised as an iconic restaurant set amongst a parade of mid-Victorian shops and cafes in stunning Primrose Hill, attracting illustrious Patrons from the worlds of art and theatre for over three decades.

Bryn's Modern British cuisine is an innovative marriage of textures and flavours utilising the finest produce from his native Wales, around the UK and Europe; Salt Marsh lamb, venison and chickens from the Rhug Estate in North Wales, halibut and scallops from Scotland. Bryn is a great believer in using British produce wherever possible; creating food that reflects his personality and heritage, and giving a distinctive edge to his perfectly executed dishes.

 Odette's is open for lunch and dinner Tuesday to Sunday, serving a set lunch menu during the week, 2 courses for £14, a la carte for dinner and a set lunch on Sunday for £25 for 3 courses.

Bryn has transformed the downstairs Bar with the addition of comfortable banquette seating and new low armchairs. He has also reinstated the two original alcoves, making the bar the perfect intimate and stylish destination for cocktails before dinner, or drinks all evening accompanied by Bryn's bar dishes including Smoked Salmon, Brisket Terrine, Battered Fish and Cheese selection.
